I’ll be the first to admit that I spend a lot of time on this blog waxing nostalgic about Canada. It’s not helped by the fact that we watched the David Attenborough documentary called Wild Canada recently.
And it’s true. I miss my family and friends (and the mountains and real season changes). I may have even said how much I miss the snow.
Then today, I saw that Edmonton has its first snowfall. It’s September 8th.
I heard about the snow while I was splashing in the sea on the beach in a sundress.
The beach that I now live 2 minutes away from in an amazing flat in an amazing town.
Hmm… maybe I need to rethink this.
Maybe England is pretty sweet after all.
And so, to celebrate the beautiful British weather (how often do I get to say that?!), a summery,raw, creamy lemon coriander salad dressing.
- 1 large ripe avocado, peeled and pitted
- ¾ bunch coriander (about 1 cup loosely packed)
- ½ cup fresh parsley
- juice of 2 lemons
- zest of 1 lemon
- ½ cup water
- 1 clove garlic, grated or minced
- 1 TBSP vinegar
- Add all ingredients to your blender and blend until smooth! Add water a bit at a time if you would like to thin the consistency out.
